
Mediterranean Style Comfort Rice

Ingredients:
- 1 cup Rice
- 2 tablespoons Olive oil
- 1 medium Onion, chopped
- 2 cloves Garlic cloves, minced
- 1 pepper Red bell pepper, chopped
- 2 cups Chicken broth
- 1 cup Tomatoes, diced
- 1/2 cup Black olives, sliced
- 1/2 cup Feta cheese, crumbled
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
Instructions:
- In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and red bell pepper. Sauté until vegetables are softened.
- Stir in the rice and continue to cook, stirring continuously, for another 2-3 minutes.
- Pour in the chicken broth, diced tomatoes, dried oregano, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce heat to low, cover the skillet with a lid, and let the mixture simmer for about 20 minutes, or until the rice is cooked and the liquid has been absorbed.
- Stir in the sliced olives and crumbled feta cheese. Allow the cheese to melt slightly before serving.
