Mediterranean Style Comfort Rice

Ingredients:

  • 1 cup Rice
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic cloves, minced
  • 1 pepper Red bell pepper, chopped
  • 2 cups Chicken broth
  • 1 cup Tomatoes, diced
  • 1/2 cup Black olives, sliced
  • 1/2 cup Feta cheese, crumbled
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and red bell pepper. Sauté until vegetables are softened.
  2. Stir in the rice and continue to cook, stirring continuously, for another 2-3 minutes.
  3. Pour in the chicken broth, diced tomatoes, dried oregano, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce heat to low, cover the skillet with a lid, and let the mixture simmer for about 20 minutes, or until the rice is cooked and the liquid has been absorbed.
  5. Stir in the sliced olives and crumbled feta cheese. Allow the cheese to melt slightly before serving.
