Mediterranean Style Chicken Scramble

Ingredients:

  • 2 pieces Boneless chicken breast
  • 6 large Eggs
  • 1 cup Fresh spinach
  • 1 medium Red bell pepper
  • 0.5 cup Feta cheese
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. 1. Heat 1 tbsp of olive oil in a pan over medium heat. Add the diced chicken breast and cook until it's no longer pink inside, about 10 minutes. Remove from pan and set aside.
  2. 2. In the same pan, add another tbsp of oil, diced bell pepper, and spinach. Cook until the spinach is wilted and pepper is tender.
  3. 3. While the vegetables are cooking, beat the eggs in a separate bowl. Stir in a pinch of salt and black pepper.
  4. 4. Pour the beaten eggs over the vegetables in the pan. Stir gently to combine and let the eggs set for a minute. Then stir again, lifting and folding it over from the bottom of the pan.
  5. 5. When the eggs are almost set, add the cooked chicken and feta cheese. Stir all together until evenly mixed. Let the scramble cook for another minute or two.
  6. 6. Serve the scramble hot off the stove or let it cool for a few minutes. Top with some more feta cheese and a sprinkle of pepper if preferred. Enjoy this healthy Mediterranean breakfast!
