
Mediterranean Style Chicken Scramble

Ingredients:
- 2 pieces Boneless chicken breast
- 6 large Eggs
- 1 cup Fresh spinach
- 1 medium Red bell pepper
- 0.5 cup Feta cheese
- 2 tbsp Olive oil
- to taste Salt
- to taste Black pepper
Instructions:
- 1. Heat 1 tbsp of olive oil in a pan over medium heat. Add the diced chicken breast and cook until it's no longer pink inside, about 10 minutes. Remove from pan and set aside.
- 2. In the same pan, add another tbsp of oil, diced bell pepper, and spinach. Cook until the spinach is wilted and pepper is tender.
- 3. While the vegetables are cooking, beat the eggs in a separate bowl. Stir in a pinch of salt and black pepper.
- 4. Pour the beaten eggs over the vegetables in the pan. Stir gently to combine and let the eggs set for a minute. Then stir again, lifting and folding it over from the bottom of the pan.
- 5. When the eggs are almost set, add the cooked chicken and feta cheese. Stir all together until evenly mixed. Let the scramble cook for another minute or two.
- 6. Serve the scramble hot off the stove or let it cool for a few minutes. Top with some more feta cheese and a sprinkle of pepper if preferred. Enjoy this healthy Mediterranean breakfast!
