
Mediterranean Style Baked Fish

Ingredients:
- 4 pieces White fish fillets
- 2 tablespoons Olive oil
- 3 cloves Garlic
- 1 Lemon
- 1/2 cup Pitted olives
- 2 medium size Fresh tomatoes
- A handful Fresh basil
- To taste Salt and pepper
Instructions:
- Preheat the oven to 180°C (356°F).
- Place the fish fillets in a baking dish, drizzle with olive oil, and season with salt and pepper.
- Chop the garlic, slice the lemon, cut the tomatoes into quarters and tear the basil leaves.
- Scatter the garlic, lemon slices, tomatoes, and olives over the fish. Add more olive oil, salt and pepper if desired.
- Place the dish in the oven, bake for 15-25 minutes or until the fish is cooked and flakes easily when tested with a fork.
- Once cooked, sprinkle the dish with torn basil leaves.
- Serve immediately, preferably with a side of couscous or brown rice.
