Mediterranean Style Baked Fish

Ingredients:

  • 4 pieces White fish fillets
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 Lemon
  • 1/2 cup Pitted olives
  • 2 medium size Fresh tomatoes
  • A handful Fresh basil
  • To taste Salt and pepper

Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Place the fish fillets in a baking dish, drizzle with olive oil, and season with salt and pepper.
  3. Chop the garlic, slice the lemon, cut the tomatoes into quarters and tear the basil leaves.
  4. Scatter the garlic, lemon slices, tomatoes, and olives over the fish. Add more olive oil, salt and pepper if desired.
  5. Place the dish in the oven, bake for 15-25 minutes or until the fish is cooked and flakes easily when tested with a fork.
  6. Once cooked, sprinkle the dish with torn basil leaves.
  7. Serve immediately, preferably with a side of couscous or brown rice.
