Mediterranean Style Baked Eggs

Ingredients:

  • 4 whole Eggs
  • 2 tablespoons Olive Oil
  • 1 cup Fresh Bell Peppers
  • 1 cup Chopped Tomatoes
  • 2 cups Spinach
  • 1/4 cup Feta Cheese
  • 1/4 cup Fresh Herbs (Basil, Parsley)
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In an oven-safe skillet, heat the olive oil over medium heat.
  3. Add the bell peppers and tomatoes to the skillet, and cook stirring often, until they soften.
  4. Add the spinach and stir until it wilts.
  5. Make small wells in the vegetable mixture for the eggs. Crack an egg into each well.
  6. Sprinkle the feta cheese and herbs over the eggs and vegetables.
  7. Season with a pinch of salt and pepper.
  8. Place the skillet in the preheated oven and bake until the egg whites are set, about 10-15 minutes.
  9. Serve the baked eggs warm with a side of whole-grain bread if desired.
