
Mediterranean Style Baked Eggs

Ingredients:
- 4 whole Eggs
- 2 tablespoons Olive Oil
- 1 cup Fresh Bell Peppers
- 1 cup Chopped Tomatoes
- 2 cups Spinach
- 1/4 cup Feta Cheese
- 1/4 cup Fresh Herbs (Basil, Parsley)
- 1 pinch Salt
- 1 pinch Pepper
Instructions:
- Preheat the oven to 400 degrees Fahrenheit.
- In an oven-safe skillet, heat the olive oil over medium heat.
- Add the bell peppers and tomatoes to the skillet, and cook stirring often, until they soften.
- Add the spinach and stir until it wilts.
- Make small wells in the vegetable mixture for the eggs. Crack an egg into each well.
- Sprinkle the feta cheese and herbs over the eggs and vegetables.
- Season with a pinch of salt and pepper.
- Place the skillet in the preheated oven and bake until the egg whites are set, about 10-15 minutes.
- Serve the baked eggs warm with a side of whole-grain bread if desired.
