Mediterranean Stuffed Vegetables

Ingredients:

  • 4 whole medium bell peppers
  • 2 whole medium zucchinis
  • 2 tablespoons olive oil
  • 1 whole onion
  • 2 whole garlic cloves
  • 2 cups cooked rice
  • 2 whole tomatoes
  • 1/2 cup feta cheese
  • 1/4 cup kalamata olives
  • 1 teaspoon oregano
  • to taste salt and black pepper

Instructions:

  1. Preheat oven to 375°F (190°C). Cut off tops of bell peppers and zucchinis, remove the seeds and hollow out the centers, creating a shell.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft and translucent. Add minced garlic and cook another minute.
  3. In the skillet, mix onions and garlic with cooked rice, chopped tomatoes, crumbled feta cheese, chopped kalamata olives and oregano. Season with salt and pepper to taste.
  4. Spoon the mixture into hollowed peppers and zucchinis. Place them upright in a baking dish. Drizzle the tops with little olive oil.
  5. Cover the baking dish with foil and bake for 30-40 minutes. Then uncover and bake for another 15-20 minutes, or until the vegetables are tender and the tops are lightly browned.
  6. Let them cool for a few minutes before serving. Enjoy your Mediterranean Stuffed Vegetables!
