Mediterranean Stuffed Vegetables

Ingredients:
- 4 whole medium bell peppers
- 2 whole medium zucchinis
- 2 tablespoons olive oil
- 1 whole onion
- 2 whole garlic cloves
- 2 cups cooked rice
- 2 whole tomatoes
- 1/2 cup feta cheese
- 1/4 cup kalamata olives
- 1 teaspoon oregano
- to taste salt and black pepper
Instructions:
- Preheat oven to 375°F (190°C). Cut off tops of bell peppers and zucchinis, remove the seeds and hollow out the centers, creating a shell.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft and translucent. Add minced garlic and cook another minute.
- In the skillet, mix onions and garlic with cooked rice, chopped tomatoes, crumbled feta cheese, chopped kalamata olives and oregano. Season with salt and pepper to taste.
- Spoon the mixture into hollowed peppers and zucchinis. Place them upright in a baking dish. Drizzle the tops with little olive oil.
- Cover the baking dish with foil and bake for 30-40 minutes. Then uncover and bake for another 15-20 minutes, or until the vegetables are tender and the tops are lightly browned.
- Let them cool for a few minutes before serving. Enjoy your Mediterranean Stuffed Vegetables!
