
Mediterranean Stuffed Pork Rolls

Ingredients:
- 4 pieces Pork cutlets
- 1 cup, chopped Spinach
- 1/2 cup, crumbled Feta cheese
- 1/3 cup, sliced Sun-dried tomatoes
- 2 tablespoons Olive oil
- 2 cloves, minced Garlic
- 1 to taste Salt and pepper
- 1 tablespoon Lemon juice
- 1 tablespoon, chopped Fresh herbs (oregano, rosemary, thyme)
Instructions:
- First, preheat your oven to 200°C or 390°F.
- Take each pork cutlet and butterfly them by making a slit down the middle, making sure not to cut all the way through.
- In a bowl, mix the chopped spinach, crumbled feta, and sliced sun-dried tomatoes.
- Scoop the spinach, feta, and sun-dried tomato mixture into the middle of the butterflied pork cutlets.
- Roll the pork cutlets over the stuffing mixture and secure with toothpicks if necessary.
- In a frying pan, heat the olive oil over medium heat. Add the garlic and stir until fragrant.
- Transfer the stuffed pork rolls to the pan and cook for a few minutes on each side until browned.
- Place the pan in the oven and roast for 25 minutes, or until the pork is cooked to your liking.
