Mediterranean Stuffed Pork Rolls

Ingredients:

  • 4 pieces Pork cutlets
  • 1 cup, chopped Spinach
  • 1/2 cup, crumbled Feta cheese
  • 1/3 cup, sliced Sun-dried tomatoes
  • 2 tablespoons Olive oil
  • 2 cloves, minced Garlic
  • 1 to taste Salt and pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon, chopped Fresh herbs (oregano, rosemary, thyme)

Instructions:

  1. First, preheat your oven to 200°C or 390°F.
  2. Take each pork cutlet and butterfly them by making a slit down the middle, making sure not to cut all the way through.
  3. In a bowl, mix the chopped spinach, crumbled feta, and sliced sun-dried tomatoes.
  4. Scoop the spinach, feta, and sun-dried tomato mixture into the middle of the butterflied pork cutlets.
  5. Roll the pork cutlets over the stuffing mixture and secure with toothpicks if necessary.
  6. In a frying pan, heat the olive oil over medium heat. Add the garlic and stir until fragrant.
  7. Transfer the stuffed pork rolls to the pan and cook for a few minutes on each side until browned.
  8. Place the pan in the oven and roast for 25 minutes, or until the pork is cooked to your liking.
