
Mediterranean Stuffed Peppers

Ingredients:
- 2 whole Bell Peppers
- 1/2 cup Feta Cheese
- 1 cup Chopped Tomato
- 2 cups Spinach
- 2 cloves Garlic
- 1 small Onion
- 1 tablespoon Olive Oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
Instructions:
- Preheat your oven to 400F.
- Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.
- Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
- Add the spinach and tomatoes to the pan, and cook until the spinach is wilted and the tomatoes are soft.
- Turn off the heat, and stir in the feta cheese, salt, and pepper.
- Stuff the mixture into the prepared bell peppers, and place them on a baking tray.
- Bake in the preheated oven for about 30 minutes, or until the peppers are soft and the mixture is heated through.
- Serve the stuffed peppers hot, and enjoy your delicious, healthy, Mediterranean midnight snack!
