Mediterranean Stuffed Peppers

Ingredients:

  • 2 whole Bell Peppers
  • 1/2 cup Feta Cheese
  • 1 cup Chopped Tomato
  • 2 cups Spinach
  • 2 cloves Garlic
  • 1 small Onion
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions:

  1. Preheat your oven to 400F.
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.
  3. Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
  4. Add the spinach and tomatoes to the pan, and cook until the spinach is wilted and the tomatoes are soft.
  5. Turn off the heat, and stir in the feta cheese, salt, and pepper.
  6. Stuff the mixture into the prepared bell peppers, and place them on a baking tray.
  7. Bake in the preheated oven for about 30 minutes, or until the peppers are soft and the mixture is heated through.
  8. Serve the stuffed peppers hot, and enjoy your delicious, healthy, Mediterranean midnight snack!
