Mediterranean Stuffed Bell Peppers with Brown Rice

Ingredients:

  • 1 cup Brown rice
  • 2 tablespoons Extra virgin olive oil
  • 1 small Onion
  • 2 cloves Garlic cloves
  • 4 large Bell peppers
  • 1 can Chopped tomatoes
  • 2 tablespoons Chopped fresh parsley
  • 0.5 cup Kalamata olives
  • 0.5 cup Crumbled feta cheese
  • to taste Salt and pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the brown rice according to the package instructions.
  3. While the rice is cooking, heat the olive oil in a pan over medium heat.
  4. Add the onion and garlic to the pan and sauté until soft.
  5. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  6. In a large bowl, combine the cooked rice, sautéed onion and garlic, chopped tomatoes, parsley, olives, feta cheese, salt, and pepper. Mix until well combined.
  7. Stuff the bell peppers with the rice mixture.
  8. Bake in the preheated oven for about 1 hour, until the peppers are soft and the stuffing is hot.
  9. Serve the stuffed bell peppers hot, garnish with more parsley and feta cheese if desired.
