
Mediterranean Stuffed Bell Peppers with Brown Rice

Ingredients:
- 1 cup Brown rice
- 2 tablespoons Extra virgin olive oil
- 1 small Onion
- 2 cloves Garlic cloves
- 4 large Bell peppers
- 1 can Chopped tomatoes
- 2 tablespoons Chopped fresh parsley
- 0.5 cup Kalamata olives
- 0.5 cup Crumbled feta cheese
- to taste Salt and pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the brown rice according to the package instructions.
- While the rice is cooking, heat the olive oil in a pan over medium heat.
- Add the onion and garlic to the pan and sauté until soft.
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
- In a large bowl, combine the cooked rice, sautéed onion and garlic, chopped tomatoes, parsley, olives, feta cheese, salt, and pepper. Mix until well combined.
- Stuff the bell peppers with the rice mixture.
- Bake in the preheated oven for about 1 hour, until the peppers are soft and the stuffing is hot.
- Serve the stuffed bell peppers hot, garnish with more parsley and feta cheese if desired.
