
Mediterranean Stuffed Bell Peppers

Ingredients:
- 4 whole Bell Peppers
- 1 cup Couscous
- 1/2 cup Feta Cheese
- 2 medium Tomatoes
- 1/2 cup Olives
- 1/4 cup Fresh Parsley
- 2 tbsp Olive Oil
- 2 cloves Garlic
- 1 whole Onion
Instructions:
- Preheat your oven to 375°F (190°C).
- Prepare couscous according to package instructions and set aside.
- In a large frying pan, heat the olive oil. Add diced onion and minced garlic. Sauté until onion is translucent.
- Mix in tomatoes, olives and parsley. Add salt and pepper according to taste. Cook for 5 minutes.
- Combine cooked couscous and vegetable mixture. Additionally, mix in crumbled feta cheese.
- Slice the tops of the bell peppers and hollow out the insides. Stuff these peppers with the couscous and vegetable mixture.
- Place the bell peppers upright in a baking dish. Bake for about 25-30 minutes until peppers are tender.
- Serve the stuffed bell peppers hot, garnished with some fresh parsley.
