Mediterranean Stuffed Bell Peppers

Ingredients:

  • 4 whole Bell Peppers
  • 1 cup Couscous
  • 1/2 cup Feta Cheese
  • 2 medium Tomatoes
  • 1/2 cup Olives
  • 1/4 cup Fresh Parsley
  • 2 tbsp Olive Oil
  • 2 cloves Garlic
  • 1 whole Onion

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare couscous according to package instructions and set aside.
  3. In a large frying pan, heat the olive oil. Add diced onion and minced garlic. Sauté until onion is translucent.
  4. Mix in tomatoes, olives and parsley. Add salt and pepper according to taste. Cook for 5 minutes.
  5. Combine cooked couscous and vegetable mixture. Additionally, mix in crumbled feta cheese.
  6. Slice the tops of the bell peppers and hollow out the insides. Stuff these peppers with the couscous and vegetable mixture.
  7. Place the bell peppers upright in a baking dish. Bake for about 25-30 minutes until peppers are tender.
  8. Serve the stuffed bell peppers hot, garnished with some fresh parsley.
