
Mediterranean Shrimp Shakshuka

Ingredients:
- 2 tablespoons olive oil
- 1 whole red onion
- 1 whole red bell pepper
- 3 cloves garlic cloves
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 can diced tomatoes in can
- 1 pound shrimp, peeled and deveined
- 4 whole eggs
- 0.5 cup feta cheese
- 1 bunch fresh parsley
- to taste salt and pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and cook until the vegetables are soft, about 5 minutes.
- Add the garlic, cumin, and paprika, and cook for another minute.
- Pour the diced tomatoes into the skillet and bring to a simmer.
- Season the shrimp with salt and pepper and add to the skillet. Cook until the shrimp are pink, about 5 minutes.
- Make four wells in the tomato sauce, and crack an egg into each well.
- Cover the skillet and cook until the eggs are just set, about 4-5 minutes.
- Sprinkle the dish with crumbled feta cheese and fresh parsley before serving.
