Mediterranean Shrimp Shakshuka

Ingredients:

  • 2 tablespoons olive oil
  • 1 whole red onion
  • 1 whole red bell pepper
  • 3 cloves garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes in can
  • 1 pound shrimp, peeled and deveined
  • 4 whole eggs
  • 0.5 cup feta cheese
  • 1 bunch fresh parsley
  • to taste salt and pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper and cook until the vegetables are soft, about 5 minutes.
  3. Add the garlic, cumin, and paprika, and cook for another minute.
  4. Pour the diced tomatoes into the skillet and bring to a simmer.
  5. Season the shrimp with salt and pepper and add to the skillet. Cook until the shrimp are pink, about 5 minutes.
  6. Make four wells in the tomato sauce, and crack an egg into each well.
  7. Cover the skillet and cook until the eggs are just set, about 4-5 minutes.
  8. Sprinkle the dish with crumbled feta cheese and fresh parsley before serving.
