
Mediterranean Shrimp and Vegetable Quinoa Salad

Ingredients:
- 1 cup Quinoa
- 2 cups Water
- 1.5 pounds Raw shrimp
- 1 tablespoon Italian seasoning
- 2 tablespoons Extra virgin olive oil
- 1 cup Cherry tomatoes
- 1 Cucumber
- 0.5 Red onion
- 0.5 cup Kalamata olives
- 1 cup Feta cheese
- 3 tablespoons Lemon juice
- 2 cloves Garlic
- 2 tablespoons Fresh parsley
Instructions:
- 1. Rinse the quinoa under cold water until water comes out clear.
- 2. In a saucepan, combine quinoa and water. Bring to a simmer and cook until quinoa is tender and water is absorbed, about 15 minutes. Set aside.
- 3. In a large bowl, toss shrimp with Italian seasoning and a pinch of salt and pepper.
- 4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add shrimp and cook until pink, about 4 minutes per side. Remove from heat and set aside.
- 5. In a large bowl, combine cooked quinoa, cooked shrimp, cherry tomatoes, chopped cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese. Mix well.
- 6. In a small bowl, whisk together lemon juice, garlic, remaining olive oil, and fresh parsley. Drizzle over the quinoa salad and toss to combine.
