
Mediterranean Shrimp and Vegetable Quinoa

Ingredients:
- 1 pound raw shrimp
- 1 medium red bell pepper
- 1 medium yellow bell pepper
- 2 pieces garlic cloves
- 1 cup quinoa
- 2 cups low-sodium vegetable broth
- 2 tablespoons olive oil
- to taste salt
- to taste pepper
- a handful chopped fresh parsley
- half juiced lemon
Instructions:
- Start by deveining and cleaning the shrimp. Set them aside.
- Slice the bell peppers and mince the garlic.
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the quinoa, cover, reduce heat to low, and simmer for approximately 15 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium heat.
- Add the garlic and cook until fragrant.
- Add the shrimp and bell peppers to the skillet. Season with salt and pepper. Cook until the shrimp has turned pink, about 5 minutes.
- Fluff the cooked quinoa with a fork and combine it with the shrimp and bell peppers.
- Squeeze the juice of half a lemon over the top, and toss in some fresh, chopped parsley. Adjust seasoning if necessary and serve.
