Mediterranean Shrimp and Vegetable Quinoa

Ingredients:

  • 1 pound raw shrimp
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 2 pieces garlic cloves
  • 1 cup quinoa
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • a handful chopped fresh parsley
  • half juiced lemon

Instructions:

  1. Start by deveining and cleaning the shrimp. Set them aside.
  2. Slice the bell peppers and mince the garlic.
  3. In a medium saucepan, bring the vegetable broth to a boil.
  4. Add the quinoa, cover, reduce heat to low, and simmer for approximately 15 minutes.
  5. Meanwhile, heat the olive oil in a large skillet over medium heat.
  6. Add the garlic and cook until fragrant.
  7. Add the shrimp and bell peppers to the skillet. Season with salt and pepper. Cook until the shrimp has turned pink, about 5 minutes.
  8. Fluff the cooked quinoa with a fork and combine it with the shrimp and bell peppers.
  9. Squeeze the juice of half a lemon over the top, and toss in some fresh, chopped parsley. Adjust seasoning if necessary and serve.
