
Mediterranean Shrimp and Spinach Omelette

Ingredients:
- 4 pieces Eggs
- 200 grams Fresh shrimp
- 2 cups Fresh spinach
- 2 cloves Garlic
- 2 tablespoons Olive oil
- to taste Salt and pepper
- 50 grams Feta cheese
Instructions:
- Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until smooth.
- Peel and finely chop the garlic.
- Heat a tablespoon of olive oil in a non-stick frying pan over medium heat. Add the shrimp and cook until pink, about 2-3 minutes. Remove the shrimp from the pan and set aside.
- In the same pan, add another tablespoon of olive oil and the garlic. Cook for about 1 minute until fragrant.
- Add the spinach to the pan and cook until wilted, about 2 minutes.
- Pour the beaten eggs over the spinach and let it cook without stirring until the edges start to set, about 2 minutes.
- Spread the cooked shrimp over the omelette and crumble the feta cheese on top.
- Fold the omelette in half and let it cook for another 2-3 minutes until the cheese is melted and the eggs are cooked to your liking.
- Serve the Mediterranean Shrimp and Spinach Omelette hot with a slice of toasted bread if desired. Enjoy your Mediterranean breakfast.
