
Mediterranean Shrimp and Feta Cheese Casserole

Ingredients:
- 2 tablespoons olive oil
- 1 whole, chopped onion
- 2 whole, minced garlic cloves
- 14 ounces diced canned tomatoes
- 0.5 cup dry white wine
- 1 pound, peeled and deveined shrimp
- 1 cup, crumbled feta cheese
- 1 teaspoon dried oregano
- 0.25 cup, chopped fresh parsley
- to taste salt
- to taste pepper
Instructions:
- Preheat the oven to 375℉ (190℃).
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and golden, about 5 minutes.
- Add the garlic to the skillet and cook for another minute.
- Add the diced tomatoes and the wine to the skillet, increase the heat to medium-high and bring the mixture to a simmer.
- Reduce the heat to medium-low and let the mixture simmer for 10 minutes.
- Season the shrimp with salt and pepper, then add them to the skillet, stir and cook for about 2-3 minutes, until they turn pink.
- Transfer the shrimp and tomato mixture to a baking dish. Sprinkle the feta cheese and oregano over the top.
- Place the dish in the preheated oven and bake for about 10 minutes, until the cheese is melted and slightly golden.
- Remove the casserole from the oven, sprinkle with chopped parsley and serve warm.
