Mediterranean Shrimp and Feta Cheese Casserole

Ingredients:

  • 2 tablespoons olive oil
  • 1 whole, chopped onion
  • 2 whole, minced garlic cloves
  • 14 ounces diced canned tomatoes
  • 0.5 cup dry white wine
  • 1 pound, peeled and deveined shrimp
  • 1 cup, crumbled feta cheese
  • 1 teaspoon dried oregano
  • 0.25 cup, chopped fresh parsley
  • to taste salt
  • to taste pepper

Instructions:

  1. Preheat the oven to 375℉ (190℃).
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and golden, about 5 minutes.
  3. Add the garlic to the skillet and cook for another minute.
  4. Add the diced tomatoes and the wine to the skillet, increase the heat to medium-high and bring the mixture to a simmer.
  5. Reduce the heat to medium-low and let the mixture simmer for 10 minutes.
  6. Season the shrimp with salt and pepper, then add them to the skillet, stir and cook for about 2-3 minutes, until they turn pink.
  7. Transfer the shrimp and tomato mixture to a baking dish. Sprinkle the feta cheese and oregano over the top.
  8. Place the dish in the preheated oven and bake for about 10 minutes, until the cheese is melted and slightly golden.
  9. Remove the casserole from the oven, sprinkle with chopped parsley and serve warm.
