Mediterranean Shrimp and Couscous

Ingredients:

  • 1/2 pound large shrimp
  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic
  • 1/2 cup canned diced tomatoes
  • 1/2 cup couscous
  • 1/2 cup feta cheese
  • to taste salt
  • to taste black pepper

Instructions:

  1. In a large skillet, heat the olive oil over medium high heat. Add the shrimp and cook until pink.
  2. Add the minced garlic to the skillet and cook until fragrant.
  3. Stir in the diced tomatoes and bring the mixture to a simmer.
  4. In a separate pot, cook the couscous according to package instructions.
  5. Add the cooked couscous to the skillet and stir to combine.
  6. Crumble the feta cheese on top of the dish and season with salt and pepper.
