
Mediterranean Shakshuka

Ingredients:
- 2 tablespoons Olive Oil
- 1 piece Onion
- 2 pieces Bell Peppers
- 3 pieces Garlic Cloves
- 6 pieces Tomatoes
- 1 tablespoon Tomato Paste
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 0.5 teaspoon Cayenne Pepper
- 6 pieces Eggs
- to taste Salt
- to taste Pepper
- for garnish Parsley
Instructions:
- Heat the olive oil in a large frying pan and sauté onion, bell peppers and garlic until they become soft.
- Add diced tomatoes, tomato paste, spices (paprika, cumin, and cayenne pepper). Let it simmer over medium heat until the tomatoes soften and create a sauce about 15-20 mins.
- Create wells in the sauce and carefully crack an egg into each well. Season the eggs with salt and pepper.
- Cover the pan and let it cook until the eggs are done to your liking, around 5-10 mins.
- Garnish with fresh parsley, serve the Shakshuka hot with a side of warm bread.
