Mediterranean Shakshuka

Ingredients:

  • 2 tablespoons Olive Oil
  • 1 piece Onion
  • 2 pieces Bell Peppers
  • 3 pieces Garlic Cloves
  • 6 pieces Tomatoes
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne Pepper
  • 6 pieces Eggs
  • to taste Salt
  • to taste Pepper
  • for garnish Parsley

Instructions:

  1. Heat the olive oil in a large frying pan and sauté onion, bell peppers and garlic until they become soft.
  2. Add diced tomatoes, tomato paste, spices (paprika, cumin, and cayenne pepper). Let it simmer over medium heat until the tomatoes soften and create a sauce about 15-20 mins.
  3. Create wells in the sauce and carefully crack an egg into each well. Season the eggs with salt and pepper.
  4. Cover the pan and let it cook until the eggs are done to your liking, around 5-10 mins.
  5. Garnish with fresh parsley, serve the Shakshuka hot with a side of warm bread.
