
Mediterranean Scrambled Eggs Snack

Ingredients:
- 4 Eggs
- 2 tbsp Olive oil
- 2 cloves Garlic
- 1 cup Cherry tomatoes
- 1/2 cup Feta cheese
- A few leaves Fresh basil
- To taste Salt
- To taste Pepper
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Crush the garlic and add it to the pan, cook until golden.
- Cut the cherry tomatoes in half and add them to the pan, cook for a minute or two.
- In a separate bowl, whisk the eggs and add salt and pepper.
- Pour the eggs over the garlic and tomatoes in the pan.
- Stir gently with a spatula until the eggs are starting to set, about 3-4 minutes.
- Crumble the feta cheese over the eggs.
- Cook for another minute, until the eggs are fully set and the feta is slightly melted.
- Turn off the heat and sprinkle the fresh basil leaves on top.
- Serve immediately.
