Mediterranean Scrambled Eggs Snack

Ingredients:

  • 4 Eggs
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 cup Cherry tomatoes
  • 1/2 cup Feta cheese
  • A few leaves Fresh basil
  • To taste Salt
  • To taste Pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Crush the garlic and add it to the pan, cook until golden.
  3. Cut the cherry tomatoes in half and add them to the pan, cook for a minute or two.
  4. In a separate bowl, whisk the eggs and add salt and pepper.
  5. Pour the eggs over the garlic and tomatoes in the pan.
  6. Stir gently with a spatula until the eggs are starting to set, about 3-4 minutes.
  7. Crumble the feta cheese over the eggs.
  8. Cook for another minute, until the eggs are fully set and the feta is slightly melted.
  9. Turn off the heat and sprinkle the fresh basil leaves on top.
  10. Serve immediately.
