
Mediterranean Roasted Vegetables

Ingredients:
- 2 tablespoons olive oil
- 3 garlic cloves
- 1 large zucchini
- 1 medium eggplant
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large red onion
- 2 large tomatoes
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- to taste salt and pepper
Instructions:
- Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
- Cut all the vegetables into large pieces.
- Place the vegetables in a large baking tray and drizzle with olive oil.
- Sprinkle with salt, pepper, and finely chopped garlic.
- Top with fresh rosemary and thyme.
- Roast in the preheated oven for 40 minutes or until the vegetables are tender and slightly charred.
- Serve warm as a main course with crusty bread or as a side dish.
