Mediterranean Roasted Vegetables

Ingredients:

  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 1 large zucchini
  • 1 medium eggplant
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large red onion
  • 2 large tomatoes
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • to taste salt and pepper

Instructions:

  1. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
  2. Cut all the vegetables into large pieces.
  3. Place the vegetables in a large baking tray and drizzle with olive oil.
  4. Sprinkle with salt, pepper, and finely chopped garlic.
  5. Top with fresh rosemary and thyme.
  6. Roast in the preheated oven for 40 minutes or until the vegetables are tender and slightly charred.
  7. Serve warm as a main course with crusty bread or as a side dish.
