Mediterranean Rice Salad

Ingredients:

  • 1 cup Long grain rice
  • 2 cups Chicken broth
  • 1/2 cup Cherry tomatoes
  • 1 small Cucumber
  • 1/2 cup Feta cheese
  • 1/4 cup Kalamata olives
  • 1/4 cup Red onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 Garlic clove
  • to taste Salt and pepper

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Bring the chicken broth to a boil in a medium saucepan. Stir in the rice, reduce the heat to low and cover. Cook for 10 minutes, then remove from heat and let it stand for another 10 minutes.
  2. While the rice is cooking, chop the cherry tomatoes, cucumber, feta cheese, Kalamata olives, and red onion into bite-sized pieces.
  3. In a small bowl or jar, combine the olive oil, lemon juice, and minced garlic. Add salt and pepper to taste, and mix or shake well.
  4. After the rice has rested, fluff it with a fork. Combine the rice, chopped vegetables, and cheese in a large bowl. Pour the dressing over the top, and toss to combine everything.
  5. Serve the Mediterranean Rice Salad immediately, or refrigerate it for later. It's a healthy and delicious snack!
