
Mediterranean Rice Salad

Ingredients:
- 1 cup Long grain rice
- 2 cups Chicken broth
- 1/2 cup Cherry tomatoes
- 1 small Cucumber
- 1/2 cup Feta cheese
- 1/4 cup Kalamata olives
- 1/4 cup Red onion
- 3 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 1 Garlic clove
- to taste Salt and pepper
Instructions:
- Rinse the rice under cold water until the water runs clear. Bring the chicken broth to a boil in a medium saucepan. Stir in the rice, reduce the heat to low and cover. Cook for 10 minutes, then remove from heat and let it stand for another 10 minutes.
- While the rice is cooking, chop the cherry tomatoes, cucumber, feta cheese, Kalamata olives, and red onion into bite-sized pieces.
- In a small bowl or jar, combine the olive oil, lemon juice, and minced garlic. Add salt and pepper to taste, and mix or shake well.
- After the rice has rested, fluff it with a fork. Combine the rice, chopped vegetables, and cheese in a large bowl. Pour the dressing over the top, and toss to combine everything.
- Serve the Mediterranean Rice Salad immediately, or refrigerate it for later. It's a healthy and delicious snack!
