
Mediterranean Rice Pilaf with Exotic Spices

Ingredients:
- 1 cup Long grain rice
- 2 cups Chicken broth
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 small Onion
- pinch Saffron threads
- 1 teaspoon Ground cumin
- 1 teaspoon Paprika
- 1 teaspoon Coriander seeds
Instructions:
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cook until the onion is tender and translucent, about 5 minutes.
- Add the rice to the saucepan, and cook, stirring constantly, until the rice is lightly toasted, about 2 minutes.
- Add the spices (saffron threads, ground cumin, paprika, and coriander seeds) to the saucepan and stir to combine.
- Add the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let the mixture simmer for about 15-20 minutes, or until the rice is cooked through and has absorbed all of the liquid.
- Once the rice is cooked, remove the saucepan from the heat and let the rice sit, covered, for about 5 minutes. Then, fluff the rice with a fork and serve hot.
