Mediterranean Rice Pilaf with Exotic Spices

Ingredients:

  • 1 cup Long grain rice
  • 2 cups Chicken broth
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 small Onion
  • pinch Saffron threads
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Coriander seeds

Instructions:

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cook until the onion is tender and translucent, about 5 minutes.
  2. Add the rice to the saucepan, and cook, stirring constantly, until the rice is lightly toasted, about 2 minutes.
  3. Add the spices (saffron threads, ground cumin, paprika, and coriander seeds) to the saucepan and stir to combine.
  4. Add the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let the mixture simmer for about 15-20 minutes, or until the rice is cooked through and has absorbed all of the liquid.
  5. Once the rice is cooked, remove the saucepan from the heat and let the rice sit, covered, for about 5 minutes. Then, fluff the rice with a fork and serve hot.
