Mediterranean Rice Pilaf

Ingredients:

  • 1 cup long-grain rice
  • 2 tbsp extra-virgin olive oil
  • 1 pc onion, finely chopped
  • 2 pc garlic cloves, minced
  • 2 cups chicken broth
  • 1 pc lemon, juiced
  • 3 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes.
  2. Add the garlic, rice, salt, and pepper to the skillet. Cook, stirring constantly, for about 2 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce heat to low, cover the skillet with a lid and let everything simmer until the rice is fully cooked and the liquid is absorbed, about 15-20 minutes. Make sure to stir occasionally.
  5. Once the rice is cooked, remove from heat. Add the fresh parsley, dill, and lemon juice. Stir everything until well combined.
  6. Serve the Mediterranean rice pilaf warm with a side of grilled vegetables or a fresh salad.
