
Mediterranean Rice Pilaf

Ingredients:
- 1 cup long-grain rice
- 2 tbsp extra-virgin olive oil
- 1 pc onion, finely chopped
- 2 pc garlic cloves, minced
- 2 cups chicken broth
- 1 pc lemon, juiced
- 3 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 tsp salt
- 1/2 tsp pepper
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes.
- Add the garlic, rice, salt, and pepper to the skillet. Cook, stirring constantly, for about 2 minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover the skillet with a lid and let everything simmer until the rice is fully cooked and the liquid is absorbed, about 15-20 minutes. Make sure to stir occasionally.
- Once the rice is cooked, remove from heat. Add the fresh parsley, dill, and lemon juice. Stir everything until well combined.
- Serve the Mediterranean rice pilaf warm with a side of grilled vegetables or a fresh salad.
