Mediterranean Rice Bowl

Ingredients:

  • 1 cup Long grain rice
  • 2 Boneless chicken thighs
  • half cup Cherry tomatoes
  • half cup diced Persian cucumbers
  • quarter cup Kalamata olives pitted
  • quarter cup crumbled Feta cheese
  • 2 tbsp Olive oil
  • 1 minced Garlic cloves
  • half juiced Lemon
  • to taste Salt and Pepper

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Then, heat one tablespoon of olive oil in a pot on medium heat. Add the rice and sauté for a couple of minutes. Pour in 2 cups of water into the pot and bring it to boil. Once boiling, reduce heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is tender.
  2. While the rice is cooking, season chicken thighs with salt, pepper, and minced garlic. Heat the remaining olive oil in a pan over medium heat and cook the chicken until it’s browned and fully cooked through.
  3. Slice cherry tomatoes and Persian cucumbers and set them aside.
  4. When the rice and chicken are done, allow them to cool down a bit. Assemble the bowls by spooning rice at the bottom, then add chicken, sliced tomatoes, diced cucumbers, olives, feta cheese and a drizzle of lemon juice.
