Mediterranean Rice Balls

Ingredients:

  • 2 cups Arborio rice
  • 4 cups Water
  • 100 grams Mozzarella cheese
  • 3 tbsp Olive oil
  • 1 cup Bread crumbs
  • 2 medium Eggs
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions:

  1. Cook the Arborio rice according to the instructions on the package, then set aside to cool.
  2. Cut the mozzarella cheese into small cubes.
  3. Once the rice is cooled, add the cheese cubes and mix well.
  4. Form the mixture into balls, about the size of a golf ball.
  5. Beat the eggs in a bowl. In another bowl, add the bread crumbs.
  6. Dip each rice ball into the eggs, then roll in the bread crumbs.
  7. Heat the olive oil in a frying pan, then fry the rice balls until they are golden brown.
  8. Remove the rice balls from the pan and drain on paper towels.
  9. Season with salt and pepper to taste.
  10. Serve hot.
