
Mediterranean Rice Balls

Ingredients:
- 2 cups Arborio rice
- 4 cups Water
- 100 grams Mozzarella cheese
- 3 tbsp Olive oil
- 1 cup Bread crumbs
- 2 medium Eggs
- 1 tsp Salt
- 1 tsp Pepper
Instructions:
- Cook the Arborio rice according to the instructions on the package, then set aside to cool.
- Cut the mozzarella cheese into small cubes.
- Once the rice is cooled, add the cheese cubes and mix well.
- Form the mixture into balls, about the size of a golf ball.
- Beat the eggs in a bowl. In another bowl, add the bread crumbs.
- Dip each rice ball into the eggs, then roll in the bread crumbs.
- Heat the olive oil in a frying pan, then fry the rice balls until they are golden brown.
- Remove the rice balls from the pan and drain on paper towels.
- Season with salt and pepper to taste.
- Serve hot.
