
Mediterranean Quinoa Salad

Ingredients:
- 1 cup Quinoa
- 2 cups Water
- 1 cup, diced Cucumber
- 1 cup, diced Tomatoes
- 1/2 diced Red onion
- 1/2 cup, crumbled Feta cheese
- 1/3 cup, finely chopped Fresh parsley
- 3 tablespoons Lemon juice
- 2 tablespoons Olive oil
- to taste Salt and pepper
Instructions:
- Place quinoa and water in a medium-size pot and bring to a boil. Once boiling, reduce heat to a simmer and cover. Allow to cook for 15 minutes or until all water is absorbed. Once done, fluff with a fork and let cool before combining with other ingredients.
- In a large bowl, combine cooled quinoa, diced cucumber, tomatoes, red onion, crumbled feta cheese, and chopped parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the salad and mix well to combine.
- Serve salad chilled or at room temperature. Enjoy this healthy Mediterranean lunch.
