Mediterranean Quinoa Salad

Ingredients:

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup, diced Cucumber
  • 1 cup, diced Tomatoes
  • 1/2 diced Red onion
  • 1/2 cup, crumbled Feta cheese
  • 1/3 cup, finely chopped Fresh parsley
  • 3 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • to taste Salt and pepper

Instructions:

  1. Place quinoa and water in a medium-size pot and bring to a boil. Once boiling, reduce heat to a simmer and cover. Allow to cook for 15 minutes or until all water is absorbed. Once done, fluff with a fork and let cool before combining with other ingredients.
  2. In a large bowl, combine cooled quinoa, diced cucumber, tomatoes, red onion, crumbled feta cheese, and chopped parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the salad and mix well to combine.
  4. Serve salad chilled or at room temperature. Enjoy this healthy Mediterranean lunch.
