Mediterranean Quick Rice

Ingredients:

  • 1 cup Rice
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 can Diced tomatoes
  • 2 cups Vegetable broth
  • 1 tsp Dried oregano
  • 1 cup Chopped spinach
  • 0.5 cup Feta cheese

Instructions:

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the garlic and cook until fragrant.
  3. Add the rice and stir until coated with the oil.
  4. Add the tomatoes, vegetable broth, and oregano. Bring to a boil.
  5. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  6. Stir in the chopped spinach and feta cheese until well combined.
