
Mediterranean Quick Rice

Ingredients:
- 1 cup Rice
- 2 tbsp Olive oil
- 2 cloves Garlic
- 1 can Diced tomatoes
- 2 cups Vegetable broth
- 1 tsp Dried oregano
- 1 cup Chopped spinach
- 0.5 cup Feta cheese
Instructions:
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and cook until fragrant.
- Add the rice and stir until coated with the oil.
- Add the tomatoes, vegetable broth, and oregano. Bring to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the chopped spinach and feta cheese until well combined.
