
Mediterranean Pork Tenderloin with Quinoa Salad

Ingredients:
- 1 piece Pork tenderloin
- 2 tablespoons Olive oil
- 2 Garlic cloves, minced
- 1 tablespoon Lemon juice
- 1 tablespoon Fresh oregano
- to taste Salt
- to taste Pepper
- 1 cup Quinoa
- 2 cups Fresh spinach leaves, chopped
- 1 cup Cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup Feta cheese, crumbled
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C).
- In a bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
- Rub the mixture all over the pork tenderloin, then place it in a baking dish.
- Roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
- While the pork is cooking, prepare the quinoa as per package instructions.
- In a large bowl, combine the cooked quinoa, chopped spinach, cherry tomatoes, olives, and feta cheese.
- Season the quinoa salad with salt and pepper to taste, then drizzle with a little more olive oil and lemon juice.
- Once the pork is done, let it rest for a few minutes before slicing.
- Serve the sliced pork tenderloin with the quinoa salad on the side.
