Mediterranean Pork Tenderloin with Quinoa Salad

Ingredients:

  • 1 piece Pork tenderloin
  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh oregano
  • to taste Salt
  • to taste Pepper
  • 1 cup Quinoa
  • 2 cups Fresh spinach leaves, chopped
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup Feta cheese, crumbled

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  3. Rub the mixture all over the pork tenderloin, then place it in a baking dish.
  4. Roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
  5. While the pork is cooking, prepare the quinoa as per package instructions.
  6. In a large bowl, combine the cooked quinoa, chopped spinach, cherry tomatoes, olives, and feta cheese.
  7. Season the quinoa salad with salt and pepper to taste, then drizzle with a little more olive oil and lemon juice.
  8. Once the pork is done, let it rest for a few minutes before slicing.
  9. Serve the sliced pork tenderloin with the quinoa salad on the side.
