Mediterranean Pork Stew

Ingredients:

  • 2 pounds pork shoulder
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 garlic cloves
  • 2 medium carrots
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons tomato paste
  • 1/2 cup dry red wine
  • 4 cups lamb or chicken stock
  • 2 bay leaves
  • 1 cup kalamata olives
  • 1 large zucchini
  • 1/2 cup feta cheese

Instructions:

  1. Heat the olive oil over medium heat in a large pot. Add the pork shoulder and brown on all sides. Remove the pork and set aside.
  2. In the same pot, add the onion and garlic, and sauté until fragrant.
  3. Add the carrots, dried thyme, and dried rosemary, and stir to combine.
  4. Stir in the tomato paste and red wine, scraping the bottom of the pot to loosen any stuck bits.
  5. Return the pork to the pot, along with the stock and bay leaves. Bring to a boil, then reduce to a simmer and cook covered for 1 hour.
  6. Add the kalamata olives and zucchini, and cook for another 30 minutes, until the pork is tender and the vegetables are cooked through.
  7. Remove from heat and let sit for 5 minutes to cool slightly. Sprinkle with feta cheese before serving.
