Mediterranean Pork Stew

Ingredients:
- 2 pounds pork shoulder
- 2 tablespoons olive oil
- 1 large onion
- 3 garlic cloves
- 2 medium carrots
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons tomato paste
- 1/2 cup dry red wine
- 4 cups lamb or chicken stock
- 2 bay leaves
- 1 cup kalamata olives
- 1 large zucchini
- 1/2 cup feta cheese
Instructions:
- Heat the olive oil over medium heat in a large pot. Add the pork shoulder and brown on all sides. Remove the pork and set aside.
- In the same pot, add the onion and garlic, and sauté until fragrant.
- Add the carrots, dried thyme, and dried rosemary, and stir to combine.
- Stir in the tomato paste and red wine, scraping the bottom of the pot to loosen any stuck bits.
- Return the pork to the pot, along with the stock and bay leaves. Bring to a boil, then reduce to a simmer and cook covered for 1 hour.
- Add the kalamata olives and zucchini, and cook for another 30 minutes, until the pork is tender and the vegetables are cooked through.
- Remove from heat and let sit for 5 minutes to cool slightly. Sprinkle with feta cheese before serving.
