
Mediterranean Pork Skewers

Ingredients:
- 1 lb Pork loin
- 1 cup Cherry tomatoes
- 1 large Yellow bell pepper
- 1 medium Red onion
- 2 Garlic cloves
- 1/2 cup Olive oil
- 3 tbsp Lemon juice
- 1 tsp Dried oregano
- To taste Salt
- To taste Black pepper
Instructions:
- Cut the pork loin into 1 inch cubes.
- Chop the bell pepper and onion into 1 inch pieces.
- In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt and pepper. Stir until well blended.
- Add the pork cubes to the marinade and let sit for at least 15 minutes, but no longer than 24 hours.
- Preheat a grill or stovetop grill pan to medium-high heat.
- Thread the pork, cherry tomatoes, bell pepper, and onion onto skewers.
- Cook the skewers on the preheated grill, turning occasionally, until the pork is thoroughly cooked and the vegetables are tender, about 12 minutes.
- Rest for a few minutes before serving.
