Mediterranean Pork Skewers

Ingredients:

  • 1 lb Pork loin
  • 1 cup Cherry tomatoes
  • 1 large Yellow bell pepper
  • 1 medium Red onion
  • 2 Garlic cloves
  • 1/2 cup Olive oil
  • 3 tbsp Lemon juice
  • 1 tsp Dried oregano
  • To taste Salt
  • To taste Black pepper

Instructions:

  1. Cut the pork loin into 1 inch cubes.
  2. Chop the bell pepper and onion into 1 inch pieces.
  3. In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt and pepper. Stir until well blended.
  4. Add the pork cubes to the marinade and let sit for at least 15 minutes, but no longer than 24 hours.
  5. Preheat a grill or stovetop grill pan to medium-high heat.
  6. Thread the pork, cherry tomatoes, bell pepper, and onion onto skewers.
  7. Cook the skewers on the preheated grill, turning occasionally, until the pork is thoroughly cooked and the vegetables are tender, about 12 minutes.
  8. Rest for a few minutes before serving.
