Mediterranean Pork Scramble

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 1 large, chopped bell pepper
  • 1 pound ground pork
  • 2 medium, chopped tomatoes
  • 6 eggs
  • 1 cup, crumbled feta cheese
  • 1 handful, torn fresh basil leaves
  • to taste salt
  • to taste black pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  2. Add the ground pork to the skillet and break it up with a spoon. Cook until no longer pink.
  3. Stir in the chopped tomatoes and season with salt and pepper.
  4. Crack the eggs into the skillet and scramble them with the vegetables and pork. Cook until the eggs are softly set.
  5. Sprinkle the crumbled feta and torn basil leaves over top. Stir gently to combine. Serve warm.
