
Mediterranean Pork Scramble

Ingredients:
- 2 tablespoons olive oil
- 1 medium, chopped onion
- 1 large, chopped bell pepper
- 1 pound ground pork
- 2 medium, chopped tomatoes
- 6 eggs
- 1 cup, crumbled feta cheese
- 1 handful, torn fresh basil leaves
- to taste salt
- to taste black pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
- Add the ground pork to the skillet and break it up with a spoon. Cook until no longer pink.
- Stir in the chopped tomatoes and season with salt and pepper.
- Crack the eggs into the skillet and scramble them with the vegetables and pork. Cook until the eggs are softly set.
- Sprinkle the crumbled feta and torn basil leaves over top. Stir gently to combine. Serve warm.
