Mediterranean Pork Breakfast Skillet

Ingredients:

  • 2 tablespoons Olive oil
  • 1 lb Pork tenderloin
  • 2 cloves Garlic
  • 2 Bell peppers
  • 1 cup Cherry tomatoes
  • 2 cups Spinach
  • 1/2 cup Feta cheese
  • 4 Eggs
  • To Taste Salt and pepper

Instructions:

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the pork tenderloin and cook until browned on all sides and cooked to desired doneness. Remove from the skillet and set aside.
  3. Add the remaining tablespoon of olive oil to the skillet. Add the garlic, bell peppers, and cherry tomatoes. Cook until the vegetables are softened, about 5 minutes.
  4. Add the spinach to the skillet and cook until wilted.
  5. Chop the pork into bite-sized pieces and return it to the skillet. Stir to combine with the vegetables.
  6. Create 4 wells in the mixture. Crack an egg into each well.
  7. Cover the skillet and cook until the eggs are done to your liking.
  8. Season with salt and pepper and sprinkle with feta cheese before serving.
