
Mediterranean Pork Breakfast Skillet

Ingredients:
- 2 tablespoons Olive oil
- 1 lb Pork tenderloin
- 2 cloves Garlic
- 2 Bell peppers
- 1 cup Cherry tomatoes
- 2 cups Spinach
- 1/2 cup Feta cheese
- 4 Eggs
- To Taste Salt and pepper
Instructions:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the pork tenderloin and cook until browned on all sides and cooked to desired doneness. Remove from the skillet and set aside.
- Add the remaining tablespoon of olive oil to the skillet. Add the garlic, bell peppers, and cherry tomatoes. Cook until the vegetables are softened, about 5 minutes.
- Add the spinach to the skillet and cook until wilted.
- Chop the pork into bite-sized pieces and return it to the skillet. Stir to combine with the vegetables.
- Create 4 wells in the mixture. Crack an egg into each well.
- Cover the skillet and cook until the eggs are done to your liking.
- Season with salt and pepper and sprinkle with feta cheese before serving.
