Mediterranean Pasta Primavera

Ingredients:

  • 1 pound Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 Red bell pepper
  • 1 Zucchini
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled Feta cheese
  • 1/4 cup chopped Fresh basil
  • to taste Salt and pepper

Instructions:

  1. Cook the pasta in a large pot of boiling salted water until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté until fragrant. Then, add the chopped red bell pepper and zucchini. Cook until softened.
  4. Stir in the cherry tomatoes and kalamata olives. Cook until the tomatoes start to burst.
  5. Toss the cooked pasta with the vegetable mixture. Season with salt and pepper to taste.
  6. Top with crumbled feta cheese and fresh basil before serving. Enjoy your Mediterranean Pasta Primavera!
