
Mediterranean Pasta Primavera

Ingredients:
- 1 pound Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 Red bell pepper
- 1 Zucchini
- 1 cup Cherry tomatoes
- 1/2 cup Kalamata olives
- 1/2 cup crumbled Feta cheese
- 1/4 cup chopped Fresh basil
- to taste Salt and pepper
Instructions:
- Cook the pasta in a large pot of boiling salted water until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté until fragrant. Then, add the chopped red bell pepper and zucchini. Cook until softened.
- Stir in the cherry tomatoes and kalamata olives. Cook until the tomatoes start to burst.
- Toss the cooked pasta with the vegetable mixture. Season with salt and pepper to taste.
