
Mediterranean Pan-Grilled Fish

Ingredients:
- 4 pieces White fish fillets
- 2 tablespoon Olive oil
- 2 tablespoons Fresh lemon juice
- 2 cloves Garlic cloves, minced
- 3 tablespoons Chopped fresh dill
- 1 teaspoon Sea salt
- 1/2 teaspoon Ground black pepper
- 1/4 teaspoon Crushed red pepper flakes
- 2 tablespoons Drained capers, chopped
- 1.5 cups Cherry tomatoes
- 1/4 cup Kalamata olives, pitted
- 8 slices Lemon slices
Instructions:
- In a bowl, mix olive oil, lemon juice, minced garlic, dill, sea salt, black pepper, red pepper flakes, and capers. Stir well to create the marinade.
- Place the fish fillets in the marinade, ensuring they are well covered. Allow them to sit for 10-15 minutes.
- Heat a pan over medium heat. Add the fish fillets, discarding any leftover marinade.
- Grill the fish for 4-5 minutes on each side, or until cooked through and flaky.
- In the last two minutes of cooking, add the cherry tomatoes, olives, and lemon slices to the pan. Continue cooking until the tomatoes are just tender.
