Mediterranean Morning Pasta

Ingredients:

  • 1 pound Pasta
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 cup Cherry Tomatoes
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta Cheese
  • 1/4 cup Basil Leaves
  • 4 whole Eggs

Instructions:

  1. Boil pasta according to package instructions until al dente. Drain and set aside.
  2. While pasta is cooking, heat olive oil over medium-high heat in a large pan. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the cherry tomatoes and olives to the pan. Cook for 3-4 minutes, or until the tomatoes are soft and the skin is just starting to wrinkle.
  4. Reduce heat to low, and stir in the cooked pasta.
  5. Make four wells in the pasta mixture, and crack an egg into each well. Sprinkle the feta cheese and basil on top. Cover the pan and let the eggs cook until the whites are set but the yolks are till runny, about 4-5 minutes.
  6. Season with salt and pepper. Top with more basil if desired, and serve immediately.
