
Mediterranean Midnight Rice Pilaf

Ingredients:
- 1 cup Basmati Rice
- 2 Tbsps Olive Oil
- 2 units Garlic Cloves
- 1 unit Onion
- 1.5 cups Water or Vegetable Broth
- 0.5 tsp Salt
- 0.5 tsp Black Pepper
- 2 Tbsps Fresh Parsley
Instructions:
- Rinse the rice in cold water removing any foreign particles. Drain and set aside.
- Heat the olive oil in a saucepan, add finely chopped garlic and onion. Sauté until the onions are translucent and the garlic is golden brown.
- Add the rinsed rice to the saucepan and stir thoroughly with the sautéed garlic and onions. Cook on medium heat for 2 minutes, stirring occasionally.
- Add water or vegetable broth, salt, and black pepper. Stir well and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove from the heat and fluff the rice with a fork. Fold in fresh parsley before serving.
