Mediterranean Midnight Rice Pilaf

Ingredients:

  • 1 cup Basmati Rice
  • 2 Tbsps Olive Oil
  • 2 units Garlic Cloves
  • 1 unit Onion
  • 1.5 cups Water or Vegetable Broth
  • 0.5 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 Tbsps Fresh Parsley

Instructions:

  1. Rinse the rice in cold water removing any foreign particles. Drain and set aside.
  2. Heat the olive oil in a saucepan, add finely chopped garlic and onion. Sauté until the onions are translucent and the garlic is golden brown.
  3. Add the rinsed rice to the saucepan and stir thoroughly with the sautéed garlic and onions. Cook on medium heat for 2 minutes, stirring occasionally.
  4. Add water or vegetable broth, salt, and black pepper. Stir well and bring to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Remove from the heat and fluff the rice with a fork. Fold in fresh parsley before serving.
