
Mediterranean Midnight Pasta

Ingredients:
- 200 grams Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 2 large Tomatoes
- 1/4 cup Kalamata Olives
- 1/2 cup Feta Cheese
- 6 leaves Basil
- to taste Salt and Black Pepper
Instructions:
- Boil the pasta in a large pot of salted water according to package instructions.
- In the meantime, heat olive oil in a pan. Add minced garlic and sauté until fragrant.
- Chop the tomatoes and add them to the pan. Cook until they become soft and break down into a sauce.
- Drain the pasta, reserving some of the pasta water. Add the cooked pasta to the pan with tomatoes.
- Toss pasta in the sauce, adding pasta water if needed. Season with salt and pepper.
- Slice the kalamata olives and add them to the pasta, along with half of the feta cheese.
- Continue to toss until all the ingredients are mixed well and heat through. Serve hot, topping each plate with a sprinkle of the remaining feta cheese and fresh basil leaves.
