Mediterranean Midnight Pasta

Ingredients:

  • 200 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 2 large Tomatoes
  • 1/4 cup Kalamata Olives
  • 1/2 cup Feta Cheese
  • 6 leaves Basil
  • to taste Salt and Black Pepper

Instructions:

  1. Boil the pasta in a large pot of salted water according to package instructions.
  2. In the meantime, heat olive oil in a pan. Add minced garlic and sauté until fragrant.
  3. Chop the tomatoes and add them to the pan. Cook until they become soft and break down into a sauce.
  4. Drain the pasta, reserving some of the pasta water. Add the cooked pasta to the pan with tomatoes.
  5. Toss pasta in the sauce, adding pasta water if needed. Season with salt and pepper.
  6. Slice the kalamata olives and add them to the pasta, along with half of the feta cheese.
  7. Continue to toss until all the ingredients are mixed well and heat through. Serve hot, topping each plate with a sprinkle of the remaining feta cheese and fresh basil leaves.
