
Mediterranean Midnight Chicken Pita

Ingredients:
- 2 pieces Boneless chicken breast
- 4 pieces Whole wheat pita bread
- 1/2 head Romaine lettuce
- 2 medium Tomatoes
- 1 medium Cucumber
- 1/2 cup Greek yogurt
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- 2 cloves Garlic
- 1 teaspoon Dried oregano
- to taste Salt and pepper
Instructions:
- In a small bowl, combine Greek yogurt, minced garlic, lemon juice, dried oregano, salt and pepper. Let it sit for 5-10 minutes to allow flavors to meld.
- Cut chicken breasts into thin slices. Season them with olive oil, salt, and pepper.
- Heat a pan over medium heat. Once hot, add the chicken slices. Cook until they're golden brown and no longer pink in the center, about 7-10 minutes each side. Remove from heat and let it rest.
- While the chicken rests, prepare the salad. Finely chop the romaine lettuce, tomatoes, and cucumber. Toss them together in a bowl.
- Warm up the pita breads in the oven or on a hot plate.
- To assemble, open up a pita bread and spread a generous amount of the Greek yogurt mixture on the inside. Add a handful of salad, followed by the cooked chicken slices.
- Repeat the process with the remaining pita breads. Serve immediately.
