
Mediterranean Lemon Herb Roasted Chicken

Ingredients:
- 1 whole chicken
- 2 lemon
- 6 garlic cloves
- 2 tablespoons olive oil
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions:
- Preheat your oven to 425 degrees F (220 degrees C).
- Rinse the chicken and pat it dry. Season inside and out with salt and pepper.
- In a small bowl, combine crushed garlic, lemon juice, and olive oil. Rub this mixture all over the chicken, inside and out.
- Stuff the cavity of the chicken with the lemon halves, rosemary, and thyme.
- Place the chicken in a roasting pan and roast in the preheated oven for 45 minutes, or until the juices run clear. Let the chicken rest for 10 minutes before carving.
- Serve the chicken with a side of roasted vegetables or a fresh Mediterranean salad.
