Mediterranean Lemon Herb Roasted Chicken

Ingredients:

  • 1 whole chicken
  • 2 lemon
  • 6 garlic cloves
  • 2 tablespoons olive oil
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions:

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. Rinse the chicken and pat it dry. Season inside and out with salt and pepper.
  3. In a small bowl, combine crushed garlic, lemon juice, and olive oil. Rub this mixture all over the chicken, inside and out.
  4. Stuff the cavity of the chicken with the lemon halves, rosemary, and thyme.
  5. Place the chicken in a roasting pan and roast in the preheated oven for 45 minutes, or until the juices run clear. Let the chicken rest for 10 minutes before carving.
  6. Serve the chicken with a side of roasted vegetables or a fresh Mediterranean salad.
