
Mediterranean Lemon Herb Rice

Ingredients:
- 1 cup Long grain white rice
- 1 tablespoon Olive oil
- 2 cloves Garlic
- 1 small Onion
- 2 cups Chicken broth
- 1/4 cup Lemon juice
- 1 teaspoon Dried basil
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat. When hot, add the diced onion and minced garlic, stir and let them cook until they become translucent.
- Add the rice into the pan and stir, let it cook for a minute until it becomes toasted.
- Pour in the chicken broth slowly, followed by the lemon juice, dried basil, dried oregano, salt and pepper. Stir everything well in the pan.
- Cover the pan with a lid, reduce the heat to low and let the rice simmer until the liquid is fully absorbed and the rice is cooked.
- Remove the pan from heat and let the rice rest, covered, for 5 minutes before fluffing with a fork.
- Serve warm as a main course.
