Mediterranean Lemon Herb Rice

Ingredients:

  • 1 cup Long grain white rice
  • 1 tablespoon Olive oil
  • 2 cloves Garlic
  • 1 small Onion
  • 2 cups Chicken broth
  • 1/4 cup Lemon juice
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. When hot, add the diced onion and minced garlic, stir and let them cook until they become translucent.
  2. Add the rice into the pan and stir, let it cook for a minute until it becomes toasted.
  3. Pour in the chicken broth slowly, followed by the lemon juice, dried basil, dried oregano, salt and pepper. Stir everything well in the pan.
  4. Cover the pan with a lid, reduce the heat to low and let the rice simmer until the liquid is fully absorbed and the rice is cooked.
  5. Remove the pan from heat and let the rice rest, covered, for 5 minutes before fluffing with a fork.
  6. Serve warm as a main course.
