
Mediterranean Grilled Pork Chops with Quinoa Salad

Ingredients:
- 2 pieces pork chops
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 garlic cloves
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried oregano
- 0.5 cup quinoa
- 1 cup cherry tomatoes
- 1 whole cucumber
- 0.5 whole red onion
- 0.25 cup feta cheese
- 2 tablespoons chopped parsley
Instructions:
- For the pork chops: Preheat grill to medium-high heat. In a small mixing bowl combine olive oil, lemon juice, minced garlic, thyme, and oregano. Season pork chops with salt and pepper, then brush with the olive oil mixture. Grill pork chops for about 7 minutes each side, or until the internal temperature reaches 145°F (63°C).
- For the quinoa salad: Cook quinoa as per package instructions and let it cool. In a large bowl combine quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and chopped parsley. The remaining olive oil mixture can be used as a dressing. Toss everything together until well combined.
- Serve the grilled pork chops with a generous serving of quinoa salad.
