
Mediterranean Grilled Fish Skewers

Ingredients:
- 400 grams White fish fillets (for example, cod or haddock)
- 2 cups Cherry tomatoes
- 2 medium-sized Zucchini
- 2 medium-sized Red bell pepper
- 2 medium-sized Yellow bell pepper
- 2 tbsps Extra virgin olive oil
- 1 tbsp Lemon zest
- 2 tbsps Lemon juice
- 2 Garlic cloves, minced
- 2 tbsps Fresh parsley, chopped
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 8 Wooden skewers
Instructions:
- Soak the wooden skewers in cold water for at least 20 minutes before cooking to prevent them from burning.
- Preheat your grill or barbecue to medium heat.
- Cut the fish fillets into 1-inch cubes, and the zucchini and bell peppers into similar sized pieces.
- In a mixing bowl, combine the olive oil, lemon zest, lemon juice, garlic, parsley, salt, and pepper to make a marinade.
- Add the fish, cherry tomatoes, zucchini, and bell peppers to the bowl. Toss to ensure everything is well coated with the marinade.
- Thread the fish and vegetables onto the skewers, alternating them for a colorful presentation.
- Grill the skewers for 7-8 minutes on each side, until the fish is cooked through and the vegetables are nicely charred.
- Serve immediately, perhaps with some whole grain pita bread or a fresh salad on the side for a light and healthy Mediterranean meal.
