Mediterranean Grilled Fish Skewers

Ingredients:

  • 400 grams White fish fillets (for example, cod or haddock)
  • 2 cups Cherry tomatoes
  • 2 medium-sized Zucchini
  • 2 medium-sized Red bell pepper
  • 2 medium-sized Yellow bell pepper
  • 2 tbsps Extra virgin olive oil
  • 1 tbsp Lemon zest
  • 2 tbsps Lemon juice
  • 2 Garlic cloves, minced
  • 2 tbsps Fresh parsley, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 8 Wooden skewers

Instructions:

  1. Soak the wooden skewers in cold water for at least 20 minutes before cooking to prevent them from burning.
  2. Preheat your grill or barbecue to medium heat.
  3. Cut the fish fillets into 1-inch cubes, and the zucchini and bell peppers into similar sized pieces.
  4. In a mixing bowl, combine the olive oil, lemon zest, lemon juice, garlic, parsley, salt, and pepper to make a marinade.
  5. Add the fish, cherry tomatoes, zucchini, and bell peppers to the bowl. Toss to ensure everything is well coated with the marinade.
  6. Thread the fish and vegetables onto the skewers, alternating them for a colorful presentation.
  7. Grill the skewers for 7-8 minutes on each side, until the fish is cooked through and the vegetables are nicely charred.
  8. Serve immediately, perhaps with some whole grain pita bread or a fresh salad on the side for a light and healthy Mediterranean meal.
