Mediterranean Grilled Chicken Salad

Ingredients:

  • 2 pieces Boneless skinless chicken breasts
  • 4 cups Mixed salad greens
  • 1 cup Feta cheese
  • 1 cup Kalamata olives
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 small Red onion
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dried oregano
  • 2 cloves Garlic cloves
  • To taste Salt
  • To taste Ground black pepper

Instructions:

  1. Preheat the grill on medium-high heat.
  2. Season both sides of the chicken with salt, black pepper, dried oregano, and garlic. Drizzle with one tablespoon of olive oil.
  3. Grill the chicken for about 5-7 minutes on each side, until it is no longer pink in the middle.
  4. While the chicken is cooking, prepare the salad. In a large bowl, combine the salad greens, cherry tomatoes, cucumber slices, red onion slices, and olives.
  5. In a small bowl, whisk together the remaining olive oil and lemon juice. Add a pinch of salt and pepper, if desired.
  6. Slice the grilled chicken and add it to the salad. Drizzle the oil and lemon mixture over the top.
  7. Sprinkle the feta cheese over the top of the salad just before serving.
