
Mediterranean Grilled Chicken Salad

Ingredients:
- 2 pieces Boneless skinless chicken breasts
- 4 cups Mixed salad greens
- 1 cup Feta cheese
- 1 cup Kalamata olives
- 1 cup Cherry tomatoes
- 1 medium Cucumber
- 1 small Red onion
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Dried oregano
- 2 cloves Garlic cloves
- To taste Salt
- To taste Ground black pepper
Instructions:
- Preheat the grill on medium-high heat.
- Season both sides of the chicken with salt, black pepper, dried oregano, and garlic. Drizzle with one tablespoon of olive oil.
- Grill the chicken for about 5-7 minutes on each side, until it is no longer pink in the middle.
- While the chicken is cooking, prepare the salad. In a large bowl, combine the salad greens, cherry tomatoes, cucumber slices, red onion slices, and olives.
- In a small bowl, whisk together the remaining olive oil and lemon juice. Add a pinch of salt and pepper, if desired.
- Slice the grilled chicken and add it to the salad. Drizzle the oil and lemon mixture over the top.
- Sprinkle the feta cheese over the top of the salad just before serving.
