Mediterranean Fruity Couscous

Ingredients:

  • 1 cup Couscous
  • 2 tbsp Olive Oil
  • 2 clove Garlic clove
  • 1 small Red Onion
  • 1 cup Cherry Tomatoes
  • 2 cups Mix of sliced fruits (Apple, Pear, Orange)
  • 1/2 cup Feta Cheese
  • to taste Salt and Pepper
  • 1/4 cup Fresh mint leaves

Instructions:

  1. Cook couscous as per package instructions and set aside.
  2. Heat a pan and add olive oil.
  3. Add chopped garlic and red onion to the pan and sauté until it is golden brown.
  4. Add the cherry tomatoes and sauté until they are slightly soft.
  5. Add your fruity mix and sauté for another 2-3 minutes.
  6. In a large bowl, mix in your cooked couscous, your sautéed mix, crumbled feta cheese, and fresh mint leaves.
  7. Season with salt and pepper according to taste.
  8. Serve warm. Enjoy your Midnight Mediterranean Fruity Couscous.
