
Mediterranean Fruity Couscous

Ingredients:
- 1 cup Couscous
- 2 tbsp Olive Oil
- 2 clove Garlic clove
- 1 small Red Onion
- 1 cup Cherry Tomatoes
- 2 cups Mix of sliced fruits (Apple, Pear, Orange)
- 1/2 cup Feta Cheese
- to taste Salt and Pepper
- 1/4 cup Fresh mint leaves
Instructions:
- Cook couscous as per package instructions and set aside.
- Heat a pan and add olive oil.
- Add chopped garlic and red onion to the pan and sauté until it is golden brown.
- Add the cherry tomatoes and sauté until they are slightly soft.
- Add your fruity mix and sauté for another 2-3 minutes.
- In a large bowl, mix in your cooked couscous, your sautéed mix, crumbled feta cheese, and fresh mint leaves.
- Season with salt and pepper according to taste.
