
Mediterranean Fish Tacos

Ingredients:
- 2 pieces Tilapia fillets
- 1/2 cup Greek yogurt
- 1 piece Lime
- 1 clove Garlic
- 1 piece Cucumber
- 1/4 cup Fresh dill
- 1 piece Tomato
- 4 pieces Whole wheat tortillas
- 2 tablespoons Olive oil
- To Taste Salt and Pepper
Instructions:
- In a bowl, mix together the Greek yogurt, minced garlic, lime zest and juice from half the lime, dill, salt and pepper. Set aside.
- Dice the cucumber and tomato and set aside.
- Heat 1 tablespoon of olive oil in a pan over medium-high heat. Season the tilapia fillets with salt and pepper and cook for 3-4 minutes each side, until the fish is opaque and easily flakes with a fork.
- Warm the tortillas in a dry skillet or in the microwave for a few seconds.
- Assemble the tacos by spreading a spoonful of the yogurt sauce on each tortilla, then top with the fish, diced cucumbers and tomatoes.
- Serve immediately and enjoy your Mediterranean Fish Tacos.
