Mediterranean Fish Tacos

Ingredients:

  • 2 pieces Tilapia fillets
  • 1/2 cup Greek yogurt
  • 1 piece Lime
  • 1 clove Garlic
  • 1 piece Cucumber
  • 1/4 cup Fresh dill
  • 1 piece Tomato
  • 4 pieces Whole wheat tortillas
  • 2 tablespoons Olive oil
  • To Taste Salt and Pepper

Instructions:

  1. In a bowl, mix together the Greek yogurt, minced garlic, lime zest and juice from half the lime, dill, salt and pepper. Set aside.
  2. Dice the cucumber and tomato and set aside.
  3. Heat 1 tablespoon of olive oil in a pan over medium-high heat. Season the tilapia fillets with salt and pepper and cook for 3-4 minutes each side, until the fish is opaque and easily flakes with a fork.
  4. Warm the tortillas in a dry skillet or in the microwave for a few seconds.
  5. Assemble the tacos by spreading a spoonful of the yogurt sauce on each tortilla, then top with the fish, diced cucumbers and tomatoes.
  6. Serve immediately and enjoy your Mediterranean Fish Tacos.
