Mediterranean Eggs Shakshuka

Ingredients:

  • 4 pieces large eggs
  • 2 tablespoons olive oil
  • 1 large onion
  • 1 large red bell pepper
  • 2 pieces garlic cloves
  • 5 medium size tomatoes
  • 1 teaspoon tomato paste
  • 1 teaspoon spices (cumin, paprika, cayenne)
  • to taste salt
  • to taste black pepper
  • 1 bunch fresh parsley (optional)

Instructions:

  1. Heat olive oil in a large pan over medium heat.
  2. Slice onion and red bell pepper then add to the pan. Saute until soft.
  3. Mince the garlic and add to the pan. Cook for another minute.
  4. Add in tomatoes, tomato paste, and spices. Cook until tomatoes are soft and the sauce has thickened.
  5. Make four wells in the sauce. Crack an egg into each well.
  6. Cover the pan and let it simmer for about 10-15 minutes or until the eggs are cooked to your liking.
  7. Finally, season with salt and pepper, garnish with fresh parsley if using, and serve with a slice of bread.
