
Mediterranean Eggs Shakshuka

Ingredients:
- 4 pieces large eggs
- 2 tablespoons olive oil
- 1 large onion
- 1 large red bell pepper
- 2 pieces garlic cloves
- 5 medium size tomatoes
- 1 teaspoon tomato paste
- 1 teaspoon spices (cumin, paprika, cayenne)
- to taste salt
- to taste black pepper
- 1 bunch fresh parsley (optional)
Instructions:
- Heat olive oil in a large pan over medium heat.
- Slice onion and red bell pepper then add to the pan. Saute until soft.
- Mince the garlic and add to the pan. Cook for another minute.
- Add in tomatoes, tomato paste, and spices. Cook until tomatoes are soft and the sauce has thickened.
- Make four wells in the sauce. Crack an egg into each well.
- Cover the pan and let it simmer for about 10-15 minutes or until the eggs are cooked to your liking.
- Finally, season with salt and pepper, garnish with fresh parsley if using, and serve with a slice of bread.
