
Mediterranean Egg Wrap

Ingredients:
- 4 count Eggs
- 2 count Whole wheat wraps
- 2 tablespoon Olive oil
- 1 cup Fresh spinach
- 1/2 cup Cherry tomatoes
- 1/4 cup Feta cheese
- 1 handful Fresh basil leaves
Instructions:
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Crack the eggs into a bowl and whisk until scrambled. Pour the eggs into the skillet and cook stirring often until just set, about 3-4 minutes. Transfer cooked eggs to a plate and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the spinach and cherry tomatoes and cook until the spinach just wilts, about 2 minutes.
- Lay out the whole wheat wraps and divide the cooked eggs, spinach, and cherry tomatoes between the two.
- Crumble the feta cheese over the top of the fillings. Add a few fresh basil leaves to each wrap.
- Roll each wrap tightly, tucking the ends in as you go. Cut each wrap in half before serving.
