Mediterranean Egg Wrap

Ingredients:

  • 4 count Eggs
  • 2 count Whole wheat wraps
  • 2 tablespoon Olive oil
  • 1 cup Fresh spinach
  • 1/2 cup Cherry tomatoes
  • 1/4 cup Feta cheese
  • 1 handful Fresh basil leaves

Instructions:

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Crack the eggs into a bowl and whisk until scrambled. Pour the eggs into the skillet and cook stirring often until just set, about 3-4 minutes. Transfer cooked eggs to a plate and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the spinach and cherry tomatoes and cook until the spinach just wilts, about 2 minutes.
  4. Lay out the whole wheat wraps and divide the cooked eggs, spinach, and cherry tomatoes between the two.
  5. Crumble the feta cheese over the top of the fillings. Add a few fresh basil leaves to each wrap.
  6. Roll each wrap tightly, tucking the ends in as you go. Cut each wrap in half before serving.
