
Mediterranean Egg Shakshuka

Ingredients:
- 2 tablespoons olive oil
- 1 large onion
- 1 red bell pepper
- 3 garlic cloves
- 1 can (14 oz) diced tomatoes
- 2 teaspoons tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 pinch cayenne pepper
- 6 eggs
- 1 bunch parsley
- 200 grams feta cheese
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the diced onion and red pepper, and sauté until they are soft.
- Add the minced garlic and the spices to the skillet. Continue to sauté until the garlic is fragrant.
- Stir in the diced tomatoes and tomato paste, and let the sauce simmer for about 10 minutes, or until it begins to reduce.
- Crack the eggs into the skillet over the tomato mixture. Cover the skillet and let the eggs cook until the yolks are done to your liking.
- Remove from heat and garnish with chopped parsley and crumbled feta cheese before serving.
