Mediterranean Egg Shakshuka

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion
  • 1 red bell pepper
  • 3 garlic cloves
  • 1 can (14 oz) diced tomatoes
  • 2 teaspoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 pinch cayenne pepper
  • 6 eggs
  • 1 bunch parsley
  • 200 grams feta cheese

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and red pepper, and sauté until they are soft.
  2. Add the minced garlic and the spices to the skillet. Continue to sauté until the garlic is fragrant.
  3. Stir in the diced tomatoes and tomato paste, and let the sauce simmer for about 10 minutes, or until it begins to reduce.
  4. Crack the eggs into the skillet over the tomato mixture. Cover the skillet and let the eggs cook until the yolks are done to your liking.
  5. Remove from heat and garnish with chopped parsley and crumbled feta cheese before serving.
