
Mediterranean Egg Salad

Ingredients:
- 4 whole Eggs
- 2 tablespoons Olive Oil
- 0.5 whole Red Onion
- 2 whole Ripe Tomatoes
- 1 whole Cucumbers
- 0.5 cup Kalamata Olives
- 100 grams Feta Cheese
- 2 tablespoons Fresh Dill
- 1 tablespoon Lemon Juice
- to taste Salt
- to taste Black Pepper
Instructions:
- Place the eggs in a saucepan and cover with cold water. Boil for 10 minutes.
- While the eggs are boiling, dice the red onion, tomatoes, and cucumber. Put them in a large bowl.
- Once the eggs are done, cool them under cold water, peel them and cut into quarters. Add them to the salad bowl.
- Add the olive oil, lemon juice, fresh dill, salt, and black pepper into the salad bowl.
- Mix well until all the ingredients are coated with the dressing.
- Top with kalamata olives and feta cheese before serving.
