Mediterranean Egg Salad

Ingredients:

  • 4 whole Eggs
  • 2 tablespoons Olive Oil
  • 0.5 whole Red Onion
  • 2 whole Ripe Tomatoes
  • 1 whole Cucumbers
  • 0.5 cup Kalamata Olives
  • 100 grams Feta Cheese
  • 2 tablespoons Fresh Dill
  • 1 tablespoon Lemon Juice
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Place the eggs in a saucepan and cover with cold water. Boil for 10 minutes.
  2. While the eggs are boiling, dice the red onion, tomatoes, and cucumber. Put them in a large bowl.
  3. Once the eggs are done, cool them under cold water, peel them and cut into quarters. Add them to the salad bowl.
  4. Add the olive oil, lemon juice, fresh dill, salt, and black pepper into the salad bowl.
  5. Mix well until all the ingredients are coated with the dressing.
  6. Top with kalamata olives and feta cheese before serving.
