
Mediterranean Comfort Shakshuka

Ingredients:
- 2 tablespoons Olive oil
- 2 pieces Bell peppers (a mix of colors)
- 3 cloves Garlic
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 5 pieces Tomatoes
- 6 pieces Eggs
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- Handful chopped Parsley
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the finely chopped bell peppers and cook until softened, about 5 minutes.
- Add the minced garlic, cumin, and paprika, and cook for another 2 minutes.
- Add the chopped tomatoes and season with salt and pepper. Simmer the mixture until the tomatoes are softened and the sauce has thickened, about 15 minutes.
- Make little wells in the sauce and break the eggs into them. Cover the pan and let the eggs cook to your desired level of firmness.
