Mediterranean Comfort Shakshuka

Ingredients:

  • 2 tablespoons Olive oil
  • 2 pieces Bell peppers (a mix of colors)
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 5 pieces Tomatoes
  • 6 pieces Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • Handful chopped Parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the finely chopped bell peppers and cook until softened, about 5 minutes.
  3. Add the minced garlic, cumin, and paprika, and cook for another 2 minutes.
  4. Add the chopped tomatoes and season with salt and pepper. Simmer the mixture until the tomatoes are softened and the sauce has thickened, about 15 minutes.
  5. Make little wells in the sauce and break the eggs into them. Cover the pan and let the eggs cook to your desired level of firmness.
  6. Sprinkle the dish with chopped parsley just before serving. Enjoy your comforting Mediterranean Shakshuka!
