Mediterranean Comfort Rice Bowl

Ingredients:

  • 1 cup Basmati Rice
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 small Red Onion
  • 1 Red Bell Pepper
  • 1/2 cup Cherry Tomatoes
  • 1/2 Cucumber
  • 1/2 cup Feta Cheese
  • 1/4 cup Kalamata Olives
  • handful chopped Parsley
  • 1 juiced Lemon
  • to taste Salt and Pepper

Instructions:

  1. Cook the Basmati rice according to the package instructions.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the garlic and onion to the skillet and sauté until fragrant and softened.
  4. Add the bell pepper and sauté until it’s just beginning to soften. Stir in the cherry tomatoes, cucumber, and olives and sauté for another minute.
  5. Stir in the cooked rice and season with salt and pepper to taste.
  6. Remove the skillet from the heat and stir in the fresh parsley, lemon juice, and feta cheese. Stir until everything is well integrated and the feta is slightly melted.
  7. Serve the Mediterranean Comfort Rice Bowl warm and enjoy your midnight cravings.
