
Mediterranean Comfort Rice Bowl

Ingredients:
- 1 cup Basmati Rice
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 small Red Onion
- 1 Red Bell Pepper
- 1/2 cup Cherry Tomatoes
- 1/2 Cucumber
- 1/2 cup Feta Cheese
- 1/4 cup Kalamata Olives
- handful chopped Parsley
- 1 juiced Lemon
- to taste Salt and Pepper
Instructions:
- Cook the Basmati rice according to the package instructions.
- In a large skillet, heat the olive oil over medium heat.
- Add the garlic and onion to the skillet and sauté until fragrant and softened.
- Add the bell pepper and sauté until it’s just beginning to soften. Stir in the cherry tomatoes, cucumber, and olives and sauté for another minute.
- Stir in the cooked rice and season with salt and pepper to taste.
- Remove the skillet from the heat and stir in the fresh parsley, lemon juice, and feta cheese. Stir until everything is well integrated and the feta is slightly melted.
- Serve the Mediterranean Comfort Rice Bowl warm and enjoy your midnight cravings.
