
Mediterranean Comfort Chicken and Veggie Hash

Ingredients:
- 2 pieces Chicken breast
- 2 medium-sized Potatoes
- 3 tablespoons Olive oil
- 1 whole Red bell pepper
- 2 cloves Garlic cloves
- 1/2 whole Red onion
- 1/3 cup Kalamata Olives
- 2 handfuls Spinach
- to taste Salt and pepper
- 1/2 cup Feta cheese
Instructions:
- Dice the chicken breast, potatoes, red bell pepper and onion.
- Mince the garlic cloves.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until chicken is fully cooked, then transfer it to a plate and set aside.
- In the same skillet, add the remaining olive oil, then add potatoes. Cook until they’re lightly browned and crispy.
- Add the red bell pepper, garlic, and onion to the skillet. Cook until the vegetables are soft.
- Add the Kalamata olives to the skillet, followed by the spinach and stir till spinach wilts.
- Return the cooked chicken to the skillet and stir everything together. Adjust the seasoning if necessary.
- Serve it hot, sprinkled with feta cheese on top.
